本文报道了对美国大口胭脂鱼含肉率及肌肉营养成分分析结果。大口胭脂鱼的含肉率69.3—72.9%,蛋白质含量17.99-18.03%,氨基酸组成:谷氨酸(GLU)2.74%,天门冬氨酸(ASP)1.86%,甘氨酸(GLY)1.02%,丙氨酸(ALA)1.08%等。四种鲜味氨基酸的含量合计为6.7%,并与其它养殖鱼类进行了比较。
This article reports the results of the analysis of the meat content and muscle nutrient content of the American mackerel. The content of meat is 69.3-72.9%, protein content is 17.99-18.03%, amino acid composition is 2.74% of glutamic acid (GLU), 1.86% of aspartic acid (ASP), glycine ( GLY) 1.02%, alanine (ALA) 1.08% and the like. Four kinds of umami amino acid content of a total of 6.7%, and with other farmed fish were compared.
