大豆向人类直接和间接提供的优质廉价蛋白营养,人们已有充分认识和应用。在生活实践中认识到大豆子实等除供给人们优质营养食品外,尚有防御和治疗某些疾病的作用。例如我国东北农村中,常把大豆子实捣成糊状,涂于人体痈肿部位用以消炎等;日本人北川勋等(1983)指出大豆不仅是营养食品,也是一种维持健康的保健药。这就启发人们跳出把大豆仅用为食品的范围,去深入探索它的医疗保健作用。
Soybean to humans directly and indirectly provide high-quality cheap protein nutrition, people have fully recognized and applied. In the practice of life, we realize that in addition to providing high-quality nutritious food to people, Soybean Seed has the function of defending and treating certain diseases. For example, in rural areas of northeastern China, soybeans are often pounded into a paste and applied to the body to reduce inflammation. Bei Chuan et al. (1983) pointed out that soybean is not only a nutritious food but also a health-care medicine . This inspired people to jump out of using soybeans only for food to explore its health care role in depth.
