由於我國有着悠久的栽培蔬菜的歷史,因而蔬菜的種類繁多,栽培的技術亦極複雜。更因所需要的部分不同:有的吃它肥大的地下根或莖,有的吃它柔嫩的葉子,有的吃它地上的嫩莖,有的吃它的果實和種籽,更有的吃它的花莖或花蕾;如果要這些部分都能發育得良好,以符合我們的需要,就必須巧妙地利用各種不同的自然環境以及人爲的辦法,來滿足各種蔬菜生長和發育的要求。中國蔬菜的現狀,是在中國地理環境的影響下及蔬菜本身的發育過程中,經過長期栽培的結果。
