N-亚硝基化合物是强致癌物,它仅以痕量状态存于某些食品中。T.A.Gough等曾提出用电子轰击源质谱高分辨峰匹配法对其测定,本实验也用此法测定了白莱、玉米等78份样品中四种挥发性N-亚硝基化合物含量,并对测定结果进行了讨论与评价。
N-nitroso compounds are strong carcinogens, which exist in certain foods only in trace amounts. TAGough et al.
