目的调查济南居民日常消费的蔬菜、水果、粮食和鲜肉中铜、锰、锌、硒的含量。方法于2008年采集济南居民日常消费的蔬菜、水果、粮食和鲜肉进行消化处理,采用火焰原子吸收分光光度法检测铜和锌,以石墨炉原子吸收分光光度法检测锰,以氢化物发生-原子吸收分光光度法检测硒。结果所调查的4种元素中锰和锌的含量比较高,硒最低;粮食和鲜肉中的锌和硒含量高于蔬菜和水果;粮食中的铜、锰、锌、硒含量相对较高。济南居民日常消费食品总体上铜含量低于《中国食物成分表2002》参考值,硒含量高于参考值。济南蔬菜中的锌偏低,鲜肉中的锰偏高,蔬菜、水果、粮食中的硒偏高。结论本次调查的济南常见食物铜含量较低,应引起关注。
Objective To investigate the contents of copper, manganese, zinc and selenium in vegetables, fruits, grains and fresh meat consumed by Jinan residents daily. Methods The vegetables, fruits, grains and fresh meat consumed by daily residents in Jinan were collected for digestion treatment in 2008, copper and zinc were detected by flame atomic absorption spectrophotometry, manganese was detected by graphite furnace atomic absorption spectrometry, and the hydride generation- Atomic Absorption Spectrophotometric Determination of Selenium. Results The contents of Mn and Zn in the four elements investigated were relatively high, while selenium was the lowest. The contents of zinc and selenium in grains and fresh meat were higher than those in vegetables and fruits. The contents of copper, manganese, zinc and selenium in grains were relatively high. Jinan residents daily consumption of food overall copper content is lower than the “China Food Composition Table 2002” reference value, selenium content higher than the reference value. Jinan, zinc in vegetables is low, the high manganese in the meat, vegetables, fruits, high in grain selenium. Conclusion The low copper content of common food in Jinan in this survey should be concerned.
