[目的]了解太原市餐饮单位卫生状况,为制定卫生管理措施提供科学依据。[方法]采用现况调查法由卫生监督人员现场填写,食(饮)具检测用大肠菌群快速检验纸片法进行。[结果]卫生许可证持证率大、中、小型餐饮单位分别93.55%、92.68%、90.62%,健康证持证率分别74.81%、68.70%、60.52%,卫生制度健全率分别为41.94%、31.71%、14.06%,采购食品原辅料索证率分别为58.06%、43.90%、29.69%,冷荤间五专率分别为39.29%、19.44%、11.36%,食(饮)具大肠菌群阳性率分别为48.72%、49.51%、61.85%。[结论]大型餐饮单位卫生状况好于中型,中型好于小型。
[Objective] To understand the sanitary status of catering units in Taiyuan and provide a scientific basis for formulating health management measures. [Method] The status quo survey method was used by the health supervision personnel to fill in the scene and test the foodstuff (drink) with the test coliform fast test paper method. [Results] The certified rate of health permits was 93.55%, 92.68% and 90.62% respectively, and the health certificates were 74.81%, 68.70% and 60.52% respectively, and the health system was 41.94% 31.71% and 14.06% respectively. The certified rates of procurement of raw materials for foodstuffs were 58.06%, 43.90% and 29.69%, respectively, and the five specialties of cold meat were 39.29%, 19.44% and 11.36% Respectively 48.72%, 49.51%, 61.85%. [Conclusion] The health status of large-scale catering units is better than medium-sized ones and medium-sized ones are better than small ones.
