自1978年以来,中国畜牧业连续16年以平均年递增率超过10%的速度发展,使生猪生产居世界首位,肉类总产量及禽蛋总产量均跃居世界第1位,秸秆饲料的开发利用被联合国粮农组织称为“世界上唯一秸杆饲料开发利用方面有突破的国家”。由于畜牧业的发展带动了肉类工业的发展,使国民的“菜篮子”日趋丰富,“日膳营养结构”日趋合理、根据对21世纪世界肉类工业和肉品市场的预测以及中国“入关”后对肉类工业所能产生的影响,本文重点论述了中国肉类工业的发展过程及面向21世纪的发展对策,以期为发展中国家结合本国实际发展本国肉类工业并与国际肉类经济和国际市场接轨提供参考。
