小麦品质的研究,从小麦蛋白质的研究算起,至今已有一百多年的历史(Pierre 1869).由于经济发展的原因,小麦的品质只有近二十年来才逐步得到重视.又由于小麦籽粒蛋白质含量的差异主要是环境的影响,而在遗传上的差异只占较小的部分(Kramer 1979; Johnson 1973).因此,近年来,国外许多学者就小麦各种生态因子对品质的影响及其生理机制进行了大量研究.现将研究情况概述如下.
The study of wheat quality has been going on for more than one hundred years since the study of wheat protein (Pierre 1869). Due to economic development, the quality of wheat has been gradually recognized only in the last two decades. The differences in protein content are mainly environmental influences, while the genetic differences account for only a small part (Kramer 1979; Johnson 1973) .Therefore, in recent years, many foreign scholars on the impact of various ecological factors on wheat quality and its Physiological mechanism of a large number of studies are summarized below the research.
