豆豉,是用黄豆或黑豆经过蒸煮发酵而成的颗粒状调料,大概起始于秦末汉初。秦代以前并没有豆豉的记载,司马迁的《史记》以及后来的《汉书》中才出现豆豉之名,当时还有不少商贾因卖豆豉而成巨富。比如《史记·货殖列传》里就写有:“蘖盐豉千合,比千乘之家。”又如在《汉书·货食志》里面也记录有“长安豉樊少翁,王孙大卿为天下高訾。”这里的“訾”即为资,高訾就是有很多财产,由此可见那时做豆豉生意最能挣钱。
