Epidemiological studies have shown a negative correlation between the incidence of many human diseases such as cancer (breast, lung and bladder cancer) and human cruciferous vegetables (CV) intake. Cruciferous vegetables have obvious protective effects on diabetes, cardiovascular diseases and nervous system diseases. The inhibitory effect of cruciferous vegetables on neoplastic diseases depends on its abundant glucosinolate. The glucosinolate hydrolysates are predominantly isothiocyanates (ITC), which make up glutathione conjugates and albumin adducts in vivo. The main metabolite ITC-glutathione conjugate ITC-sulfur
