早在五、六十年代,发达国家就已开始进行冷却肉的研究与推广。时至今日,欧美和日本等国家都有了科学的加工工艺和流通技术,以及完善有效的质量控制体系。近几年,国内冷却肉消费市场才刚刚启动,就以冻结肉和热鲜肉都无法相比的优势迅速发展开来。在全国纷纷上马冷却肉工程时,本文以河南省肉类食品行业的发展为例并结合中国国情,探讨了我国大力发展冷却肉的前景与对策。
As early as in the 1950s and 1960s, developed countries began to research and promote cooling meat. Today, Europe, the United States, Japan, and other countries all have scientific processing and distribution technologies as well as sound and effective quality control systems. In recent years, the domestic cooling meat consumer market has only just started, and it has developed rapidly with advantages that neither frozen meat nor hot meat can match. When the cooling meat project was launched all over the country, this article took the development of the meat industry in Henan Province as an example and combined with China’s national conditions, discussed the prospects and countermeasures for the development of cooling meat in China.
