现今民族文化餐饮正面临由单一地区单一人群享用向周边地区发展和吸引多人群方向延伸,在发展的同时也面临文化背景差异带来的矛盾。本文以武侯祠周边“藏族一条街”藏族餐饮店为例对藏餐在成都的现状和发展做出初步的调查,剖析存在的自身餐饮问题及周边环境(文化、人群、习惯)反馈的问题,从实际案例及理论分析分步提出在现在主流文化冲击下民族餐饮的发展路线及创新思路。
At present, ethnic culture and catering are facing the direction of developing and attracting more people from the single population in a single area to the surrounding areas. In the meantime, they also face the contradictions arising from the differences in cultural backgrounds. This article makes a preliminary investigation on the present situation and development of Tibetan food in Chengdu by taking “Tibetan Street” and “Tibetan Street” restaurants around the Wuhou Temple as an example to analyze the existing problems of own catering and the surrounding environment (culture, people, customs) feedback From the actual case and theoretical analysis of the progress of the national cuisine under the impact of the current mainstream culture and innovative ideas.
