  Brown rice contains higher bio-functional components,such as dietary fiber,phytic acid,and γ-aminobutyric acid (GABA),in mainly rice germ and bran layers.Some new brown rice cultivars have been has been developed upon increasing consumers demand for eating and nutritional qualities.Nutritional and thermal qualities of brown rice cuhivars were characterized.Ten brown rice cultivars were used for analysis.
