一般认为,摄取脂肪多的人容易患乳癌。Hill等认为,摄取高脂肪饮食使肠管游离物中的厌氧菌增多,粪便中产生大量的酸性、中性类固醇。厌氧菌使胆汁中的类固醇形成雌激素,所以,脂肪同乳癌的发生有关。除脂肪以外,摄取肉食和砂糖多的人也易患乳癌。多食纤维素,乳癌的发生则少。纤维素多的食物,含有术酚素的前体,经肠内细菌作用变为木酚素,而木酚素具有抗雌激素的作用。所以,发生乳癌的危险性降低。此外,素食者乳癌的发生率低,原因是素食者血中的性激素结合性球蛋白高,雌激素低的缘故。
