目的掌握2012年鞍山市食品中食源性致病菌污染状况,为食源性疾病的监测和预警提供科学依据。方法按照《全国食源性致病菌监测工作手册》的要求对食源性致病菌进行监测。结果各类食品中检出致病菌67株,总体检出率为27.7%。其中副溶血性弧菌检出最多37株,其他依次为蜡样芽孢杆菌19株、金黄色葡萄球菌6株、创伤弧菌3株、沙门菌1株、志贺氏菌1株。鞍山市食品中检出各种食源性致病菌的分布情况差异有统计学意义(Fisher确切概率法,P=0.05),食品中各类食源性致病菌的检出情况差异有统计学意义(χ2=183.154,P<0.05)。结论鞍山市食品中存在食源性致病菌污染,应有针对性地加强食品安全管理。
Objective To understand the status of food-borne pathogenic bacteria in food in 2012 in Anshan, and to provide a scientific basis for the monitoring and early warning of food-borne diseases. Methods Foodborne pathogenic bacteria were monitored according to the “National Foodborne Pathogenic Bacteria Monitoring Manual”. Results All kinds of food detected 67 pathogens, the overall detection rate was 27.7%. Vibrio parahaemolyticus was detected in up to 37 isolates, followed by Bacillus cereus 19, Staphylococcus aureus 6, Vibrio vulnificus 3, Salmonella 1 and Shigella. There were significant differences in the distribution of various food-borne pathogens in Anshan food (Fisher exact probability method, P = 0.05), and there was statistical difference in the detection of various food-borne pathogens in Anshan City Significance (χ2 = 183.154, P <0.05). Conclusion There is food-borne pathogens contamination in food in Anshan City. Food safety management should be strengthened in a targeted manner.
