比色法测定辣椒果实中辣椒素含量

本文介绍比色测定辣椒中辣椒素的方法。用乙酸乙酯提取粉碎辣椒中的辣椒素,绿色辣椒的提取液能直接测定;红色辣椒提取液经碱性氧化铝柱层去掉干扰物后测定。提取液中辣椒素同亚硝酸钠—钼酸钠试剂生成黄色的络合物,在430nm处测定黄色络合物的吸收值。辣椒素含量在1.5—33.5μg/ml范围符合比尔定律。相对标准偏差是2.5%。 This article describes the colorimetric determination of capsaicin in pepper. The capsaicin was extracted from the chili peppers by using ethyl acetate, and the extract of green peppers could be measured directly. The red pepper extract was determined by removing the interfering substances by alkaline alumina column. The extract of capsaicin with sodium nitrite - sodium molybdate reagent to generate a yellow complex, measured at 430nm yellow complexes absorbance. Beer’s law is obeyed in the range of 1.5-33.5μg / ml. The relative standard deviation is 2.5%.
