在《京华名厨传》一书中张文海师傅被称为:博采众长,自成风格的鲁菜大师。凡能载入该书的都是京城烹饪界数一数二的名厨高手、国宝级烹饪大师。张文海师傅从厨60余载,因其功底深厚、技艺全面、手法精湛、独具创意的烹饪风格,为人们所称道。虽然被评为国宝级烹饪大师,生活中张师傅却非常低调,不喜欢张扬个人。但为把老师傅的经验介绍出来,扶掖后人,近日记者采访了他。
