泡沫茶是80年代初期在台湾兴起的一种新的饮茶方法。调制时,将红茶、绿茶或乌龙茶的茶汤装入由不锈钢制成的调酒器,加入冰块,再加入牛奶或其他水果、香料,还可以根据消费者的不同爱好,添加西米、枸杞等辅料,糖度也可随意调节,然后用力振摇,由于茶叶中皂甙化合物的表面活性作用,在振摇过程中产生大量泡沫,倒入杯中,根据加入辅料的不同,用不同粗细的吸管吸食。由于有大量泡沫浮在茶汤的上方,故名泡沫茶。选用不同的玻璃杯,有的茶汤红艳,内有白色西米圆粒;有的茶汤翠绿,红色樱桃或枸杞粒上下浮动,红绿相映。泡沫茶因茶汤表层有不少碎泡沫,形式特别,卖相新颖,花色众多,清凉可口,甜而不腻,现摇现卖,因而吸引大批消费者,深受各阶层人士,特别是青年人的喜爱。作者在1993年9月访台期间,发现从北部的台北到南部的高雄,从东部的花莲到泡沫茶的发源地台中,大街小巷,到处都有泡沫茶店,真可谓星罗棋布,在一条街上,走不上几十步,便会有一家泡沫茶店出现。这些泡沫茶店有的装潢华丽,布置典雅,有的西洋风格,形式类似酒吧、咖啡座,有的古色古香,仿古家俱,再加大红灯笼高挂。服务小姐有的身穿西式裙衫,有的身穿清廷服式。也有的泡沫茶店朴素简实,甚至有的类似小本经营的茶摊。但不论哪一种泡沫茶店都是宾客满屋,至少也
