晋唐时期,吐鲁番粮食作物以谷、麦为主。麦类以大麦、青麦、小麦为主,谷类以粟、广禾为主。谷麦种植实行常田轮作和部田单种相结合的耕作制度。谷麦除供人食用外,也用于牲畜饲料,并经常充当货币使用。晋唐吐鲁番粮食作物的生产和消费,受气候、土壤等自然环境的制约,也受民族、政治、经济等社会因素的影响。
