目的:了解广州市区主要消费食品中食源性致病菌的污染状况,寻找本市引起食源性疾病的重点食品,对可能发生的食源性疾病进行预测和预报。方法:按照“全国食源性致病菌监测计划”检验技术要求提出的检测方法,采集七类食品,检测沙门菌、单核细胞增生李斯特菌、副溶血性弧菌等项目。结果:264份样品中检出致病菌64份,平均检出率为24.24%;副溶血性弧菌检出率为37.50%(24/64);单增李斯特菌检出率为5.91%(14/237);沙门菌检出率为12.12%(32/264)。结论:广州市市售食品中食源性致病菌污染较为严重,应加强细菌性食源性疾病的研究分析,做好食品安全预警预报工作。
OBJECTIVE: To understand the status of food-borne pathogens in major consumer foods in Guangzhou and to find out the key foods that cause food-borne diseases in this Municipality, and to predict and predict possible food-borne diseases. Methods: According to the test method proposed by the National Foodborne Pathogenic Bacteria Monitoring Program, seven kinds of foodstuffs were collected to detect Salmonella, Listeria monocytogenes and Vibrio parahaemolyticus. Results: 64 strains of pathogens were detected in 264 samples, the average detection rate was 24.24%; the detection rate of Vibrio parahaemolyticus was 37.50% (24/64); the detection rate of Listeria monocytogenes was 5.91% (14/237). Salmonella detection rate was 12.12% (32/264). Conclusion: The food-borne pathogens in Guangzhou are more polluted. Therefore, the research on bacterial food-borne diseases should be strengthened and the early warning and forecasting of food safety should be done.
