目的了解延安市安塞区市售面制品中铝含量情况,为政府决策、控制铝污染及相关食品的监管提供科学依据。方法随机抽取延安市安塞区主要超市、集体食堂、小吃店等各类市售面制品213份,按照国家标准GB/T5009.182-2003《面制食品中铝的测定》对所采集样品的铝含量进行检测,并且根据GB 2760-2014《食品添加剂使用标准》对检测结果进行评价。结果共测定各类市售面制品213份,合格184份、不合格29份,合格率为86.4%,铝的平均含量为46.7 mg/kg,检测范围为1.1~564.2 mg/kg。不同食品中铝含量差异有统计学意义(χ~2=164.6,P<0.5)。结论延安市安塞区油条油饼铝含量超标颇为严重,铝含量超标样品主要集中在小吃店和饮食连锁店。
Objective To understand the content of aluminum in commercially-available noodles in Ansai District of Yan’an City, and provide a scientific basis for government decision-making, control of aluminum pollution and the regulation of related foodstuffs. Methods A total of 213 samples of various commercial noodles, including main supermarkets, collective canteens and snack bars, were collected randomly from Ansai District of Yan’an City. According to the national standard GB / T5009.182-2003 Determination of aluminum in noodle food, Aluminum content of the test, and in accordance with GB 2760-2014 “Food Additives using the standard” on the test results were evaluated. Results A total of 213 samples of various types of commercial noodles were obtained. The results showed that there were 184 passions and 29 passions. The pass rate was 86.4%, the average content of aluminum was 46.7 mg / kg and the detection range was 1.1 ~ 564.2 mg / kg. The content of aluminum in different foods was significantly different (χ ~ 2 = 164.6, P <0.5). Conclusion The content of aluminum in fried cake in Ansai of Yan’an City is quite serious. The samples with excessive content of aluminum are mainly concentrated in snack bars and food chain stores.
