目的了解甘肃省甘南州食品中食源性致病菌污染状况,确定可能污染致病高危食品,发现食品的安全隐患,为食品安全监管提供科学依据。方法按《食源性致病菌监测工作手册》和中华人民共和国国家标准《食品卫生微生物学检验》(GB/T4789-2003)规定的程序和方法检测、分离致病菌。结果 2010─2012年共检测1 024份样品,检出食源性致病菌104株,总检出率10.16%;蜡样芽孢杆菌检出率最高21.69%,各类食品中餐饮食品污染最为严重,阳性率17.55%,街头食品中检出率最高21.43%,第三季度食品中食源性致病菌检出率最高13.43%。结论甘肃省甘南州存在多种食品安全隐患,食品安全执法部门应重点监督那些致病高危食品,减少食源性致病菌的发生。
Objective To understand the status of food-borne pathogenic bacteria in Gannan food in Gansu province, to identify possible high-risk food contaminated, and to find out the hidden dangers of food and to provide a scientific basis for food safety regulation. Methods Pathogenic bacteria were detected and separated according to the procedures and methods stipulated in “Foodborne Pathogenic Bacteria Monitoring Manual” and People’s Republic of China National Standard “Food Hygiene Microbiological Test” (GB / T4789-2003). Results A total of 1 024 samples were detected from 2010 to 2012, and 104 food-borne pathogens were detected, with a total detection rate of 10.16%. The highest detection rate of Bacillus cereus was 21.69% and the most serious food and beverage contamination in all kinds of food , The positive rate of 17.55%, the highest detection rate of 21.43% in street food, food-borne pathogenic bacteria in the third quarter the highest detection rate of 13.43%. Conclusion There are many hidden dangers of food safety in Gannan Prefecture of Gansu Province. Food safety law enforcement agencies should focus on supervising those high risk foods that cause diseases and reduce the occurrence of foodborne pathogens.
