各种动物肉的颜色都不一样,如畜类肉多为红色或深红色,禽类肉为白色,鱼贝类为白、红、黄各种颜色。嗅味也有差别,牛肉、羊肉膻味大,鱼类味腥等。但各种肉蛋白质含量都高,还含有脂肪、水、维生素、微量元素如铁、钙、锌、磷、铜等,只是其含量不同。正是以上差异,才有不同种类的肉,其医用功效也各有差异。
