目的了解甘肃省市售浆水中亚硝酸盐的含量。方法对GB5009.33—2010《食品中亚硝酸盐与硝酸盐的测定》方法做了改进,省略了沉淀蛋白质的步骤;并按照改进的方法测定了采集于2013年4月至8月的62份浆水样品中亚硝酸盐的含量。结果 62份样品中亚硝酸盐含量均低于2 mg/kg,平均亚硝酸盐含量为0.64 mg/kg;含菜浆水亚硝酸盐含量高于不含菜浆水。结论依据GB 2762—2012《食品中污染物限量》中规定的蔬菜及其制品、腌渍发酵蔬菜中亚硝酸盐最大量为20 mg/kg,62份样品中亚硝酸盐含量均未超标。
Objective To understand the content of nitrite in commercial pulp water in Gansu Province. Methods GB5009.33-2010 “Determination of nitrite and nitrate in food” method has been improved, omitted the steps of protein precipitation; and according to the improved method was measured in April to August 2013 collected 62 Nitrite content in pulp water samples. Results The content of nitrite in 62 samples was lower than 2 mg / kg and the average content of nitrite was 0.64 mg / kg. The content of nitrite in the sample-containing water was higher than that without vegetable water. Conclusion According to the GB 2762-2012 “Limit of Contaminants in Foods”, the maximum amount of nitrite in pickled fermented vegetables is 20 mg / kg, and the content of nitrite in 62 samples is not exceeded.
