近廿年来,育种者热衷于通过增加能量物质提高蛋白质含量和质量来改善谷类物的营养价值.由于赖氨酸是单胃动物及人类的首要限制性氨基酸,故目前的研究已着重于提高谷类作物籽粒中的赖氨酸含量.在改良蛋白质质量的育种计划中,一些高赖氨酸基因已被导入大麦品种,而该品种良好的农艺性状仍然得以保持.许多研究证明,高赖氨酸大麦具有较大的蛋白质生物价值.目前,影响开发利用此有利性状的一些主要因子是高赖氨酸基因与粒重小、产量低这些性状相联系.
