16.食品速冻技术和设备我国的食品速冻技术和设备发展较快,国产速冻设备开始走向市场,但总体技术水平与国外先进水平相比仍有较大差距。冻结机效率低,至使冻结时间长,使食品营养成分下降。速冻设备的成套技术有待提高。所以目前国内的速冻技术和设备,特别是大、中型规模的设备,还主要依赖进口,应重点发展流态单体速冻机,螺旋速冻机,液氮喷淋速冻机,钢带式速冻机等设备具有良好的发展前景。17.真空冷冻干燥技术和设备近年来,我国从国外引进了一些真空冷冻干燥设备,促进了我国冻于食品加工业的发展,也促进了我国冻干技术和设备的开发和研制。由于种种原因,我国冻干技术和设备没有取得长足的发展,没有形成规模,从事该项技术研究的科研单位和成套设备制造厂数量有限,远远不能满足食品工业的需求。

Due to various reasons, China’s lyophilization technology and equipment have not achieved significant development and have not formed a scale. The number of scientific research units and complete sets of equipment manufacturing plants engaged in this technology research is limited, and it is far from meeting the needs of the food industry.
