目的:研究沙米乙醇提取物提取工艺及其抗氧化性能。方法:在超声波条件下,用单因素和正交试验研究沙米乙醇提取物工艺条件,用还原能力和Rancimat法对其抗氧化活性进行研究并和其他抗氧化剂进行比较分析。结果:从沙米中提取乙醇提取物的最佳条件为:料液比1∶15、乙醇浓度60%、超声功率500w、超声时间15min,乙醇提取物含量达6.33%;沙米乙醇提取物有较强的还原能力,当浓度为97.5mg/L时它对猪油的抗氧化活性最强,且其抗氧化活性优于同浓度Vc、BHA,但弱于Trolox。结论:沙米乙醇提取物是一种天然的强抗氧化剂;本实验所得工艺条件简单可行,乙醇提取物含量高。
Objective: To study the extraction process and its anti-oxidation properties of ethanol extracts from Sami. Methods: Under the ultrasonic conditions, the single factor and orthogonal test were used to study the technological conditions of the ethanol extract of Sabina. The antioxidative activity of the Saim extract was studied by the reduction ability and Rancimat method and compared with other antioxidants. Results: The optimum extraction conditions of ethanol extract from Shami were: liquid-to-liquid ratio 1:15, ethanol concentration 60%, ultrasonic power 500w, ultrasonic time 15min, ethanol extract content 6.33%; Shamisen ethanol extract has The strong reducing ability, when the concentration is 97.5mg/L, has the strongest antioxidant activity against lard, and its antioxidant activity is better than the same concentration of Vc and BHA, but weaker than Trolox. Conclusion: Shami ethanol extract is a natural strong antioxidant; the process conditions obtained in this experiment are simple and feasible, and the content of ethanol extract is high.
