目的分析蚕蛹食物中毒原因,为以后发生类似事件提出预防建议。方法利用现场流行病学调查、临床表现分析、现场卫生学检查、动物实验方法,追溯可疑食品来源。结果 2016年10月7日,周口市某县发生一起食物中毒事件,确定患者5人,其中男3人,女2人,经流行病学调查、卫生学检查及动物实验等分析,证实为一起食用鲜蚕蛹所致的食物中毒。结论鲜蚕蛹能导致食物中毒,食用时须做好加工处理,食用前必须做好严格挑选、严格蒸煮、快速冷却储藏、食用前充分加热4个关键点。
Objective To analyze the causes of food poisoning in silkworm chrysalis and to provide suggestions for prevention of similar events in the future. Methods The epidemiological survey, clinical manifestations, on-site hygiene tests and animal experiments were used to trace the sources of suspicious foods. Results On October 7, 2016, a food poisoning incident occurred in a county in Zhoukou City. Five patients were identified, including 3 males and 2 females. The epidemiological investigation, hygiene examination and animal experiments confirmed that they were all together Food consumption caused by eating fresh silkworm pupae. Conclusions Fresh silkworm pupae can cause food poisoning. When eating, it must be well processed. Before cooking, it must be strictly selected, strictly cooked, and quickly cooled and stored. Four key points are fully heated before eating.
