目的分析2012年滦县各类型学校食堂餐饮具消毒监测结果,为餐饮服务监管部门加强学校食堂监督管理提供科学依据。方法以滦县城区和农村学校食堂共21所为监测对象,随机抽取各类学校食堂餐饮具样品进行大肠菌群检测。结果学校食堂餐饮具大肠菌群贴试样品336份中,合格225份,合格率为66.96%;中小学、职业技术学校、幼儿园食堂餐饮具监测合格率差异存在统计学意义(χ2=26.53,P<0.01);大型餐具与小型餐具消毒合格率差异存在统计学意义(χ2=18.57,P<0.01);热力消毒餐饮具与含氯消毒剂消毒餐饮具合格率差异有统计学意义(χ2=11.77,P<0.01)。结论滦县学校食堂餐饮具卫生状况不容乐观。采用的消毒方法和从业人员素质是影响餐饮具卫生状况的主要因素。
Objective To analyze the results of disinfection and monitoring of catering tableware in all kinds of school canteens in Luanxian in 2012 and provide a scientific basis for the supervising and managing department of catering service to strengthen the supervision of school canteens. Methods Totally 21 Luanxian urban and rural school canteens were selected as monitoring objects, and all kinds of school canteens catering samples were randomly selected for coliform detection. Results There were 336 passing samples of coliform bacteria in school canteens and catering sets, of which 225 were qualified, with a passing rate of 66.96%. There were significant differences in the qualified rate of monitoring of tableware in primary and secondary schools, vocational technical schools and kindergartens (χ2 = 26.53, (Χ2 = 18.57, P <0.01). There was a significant difference in pass rate of disinfecting tableware with heat disinfection tableware and chlorine disinfectant (χ2 = 11.77, P <0.01). Conclusion Luanxian school cafeteria health status is not optimistic. Disinfection methods used and the quality of employees is the main factor affecting the sanitary conditions of tableware.
