(一)平均人、日热能与各种营养素摄取量 热能3452千卡,蛋白质、脂肪、碳水化合物分别为88g、92g和568g,钙、磷、铁分别为710mg、1624mg、21mg,胡萝卜素、VB_1、VB_2、Vpp和VC分别为0.99mg、1.4mg、0.5mg、10mg和101mg(烹调损失率Vc按50%,VB_1、VB_2、VPP按20%扣除)。热能来源百分比,蛋白质、脂肪、碳水化合物分别为10.2、24.0和65.8%。蛋白质来源百分比,谷类、豆类、动物类和其他各占64.8、14.8、12.5和7.9%。学员灶按陆勤二类灶供给,调查期为蔬菜淡季,品种少。
