目的监测达州市主要食源性致病菌污染状况,确定本地区高危食品,为预防控制食源性疾病提供科学依据。方法按照国家食源性致病菌监测工作手册要求,多级分层抽样并按标准操作程序进行检测。结果 4年监测10大类食品975件,检出食源性致病菌7种99株,总检出率为10.15%。检出数较多的依次为金黄色葡萄球菌24株、单增李斯特菌20株、蜡样芽孢杆菌18株,检出率较高的依次为副溶血性弧菌25.00%、阪崎肠杆菌21.62%、蜡样芽孢杆菌14.40%。结论达州市食品存在食源性致病菌污染,其中婴幼儿配方食品、冷冻食品和动物性水产品是主要污染食品品种。
Objective To monitor the status of the main food-borne pathogens in Dazhou and to identify the high-risk foods in this area and provide a scientific basis for the prevention and control of food-borne diseases. Methods According to the requirements of the national food-borne pathogens monitoring manual, multi-level stratified sampling and testing were conducted according to standard operating procedures. Results 975 foodstuffs of 10 categories were monitored in 4 years, 99 strains of foodborne pathogens were detected in 7 kinds, the total detection rate was 10.15%. The detection rate was 24 strains of Staphylococcus aureus, 20 strains of Listeria monocytogenes and 18 strains of Bacillus cereus. The highest detection rates were Vibrio parahaemolyticus 25.00%, Enterobacter sakazakii 21.62%, Bacillus cereus 14.40%. Conclusion There are food-borne pathogenic bacteria in food in Dazhou City. Among them, infant formula, frozen food and animal aquatic products are the main contaminated food varieties.
