蜂蜜为蜜蜂科昆虫中华蜜蜂或意大利蜂采集植物蜜腺分泌的汁液酿成的糖类物质。中医在临床实践中认为蜂蜜具有补中、润燥、止痛、解毒之功,并能促进新陈代谢、增强人体的免疫机能,是神经衰弱、胃肠道等慢性疾病的治疗和调补的良药,还可防病抗衰老,延年益寿。蜂蜜为稠厚的液体,白色至淡黄色者称为“白蜜。”桔黄色至琥珀色者称为“黄蜜”。其特征是:夏季蜜如清油状、半透明、有光泽;冬季是半固体状,伴有淡黄色鱼卵状颗粒或如炼猪油状、气芳香,味极甜。由于蜂蜜产地的蜜源不同,故有春蜜,伏蜜,秋蜜之别,在质量上有优劣之分。因此,我们必须掌握鉴别蜂蜜质量优劣及真伪的方法。
