能让重庆人头疼的事情有很多,给小面建立标准肯定是其中之一。我个人是极度排斥“标准”这个词的,它让我想起流水线和螺丝钉——冰冷、没有温度,一切都是机械般的精准和无趣。你可以想象,当小面馆老板拿出电子秤称上二两小面;打作料的时候,每种调味剂都以克为量化单位;把水温精确控制在80摄氏度以上……这是一件多么恐怖的事情,这些情形只该出现在超现实主义题材的电影或最深沉的梦魇当中。
