本文对气单胞菌在熟肉制品、销售器具中的污染状况及其该菌的致病性进行了研究。共采集样品303件,经检测有144件检出气单胞菌,阳性率高达47.2%,受试小白鼠致死率为55.6%。检测57株气单胞菌,能产生霍乱样肠毒素有6株占11%,产生甲型溶血素有36株占63%,产生乙型溶血素的有49株占86%,有50株能粘附人的“O”型血型。鉴于气单胞菌在熟肉制品中污染率之高和对人有致病能力,建议将气单胞菌列为常规致病菌检验项目之中。
In this paper, Aeromonas in cooked meat products, the sale of equipment in the pollution status and pathogenic bacteria were studied. A total of 303 samples were collected, after detection 144 Aeromonas, the positive rate was as high as 47.2%, the mortality of mice was 55.6%. Detection of 57 Aeromonas, Cholera-like enterotoxins can produce 6 strains accounted for 11%, 36 cases of producing hemolysin accounted for 63%, 49 cases of hemolysin accounted for 86%, 50 can Adhere to the person’s “O” blood type. In view of the high contamination rate of Aeromonas in cooked meat products and human pathogenicity, it is recommended that Aeromonas be included in the routine pathogens test items.
