黑木耳(Auricularia auricula),俗称木耳、光木耳,属担子菌纲,银耳目,木耳科,木耳属。黑木耳营养丰富,是人们喜爱的珍贵食品。据分析,每500克干耳中含有53克蛋白质、1克脂肪、325克醣,还有磷、钙、铁和多种维生素,并含有人体所需的8种氨基酸。维生素B_2的含量是米、面、蔬菜的10倍。铁质含量比肉高100倍。钙的含量是肉的30~70倍,可谓是“荤中之素、素中之荤”。黑木耳还对多种疾病有一定的疗效。历年来黑木耳生产栽培都采用树棒,产量很不稳定,每百斤木棒高的可收3~4斤,低的仅几两,且黑木耳的生产与林业发展产生一定的矛盾。我所从1959年开始就开展利用锯木屑代替木棒
