本文为罐头食品热过程计算发展了一个计算机程序。这个计算机程序使用了一组温度方程和致死率积分公式。由于所使用的温度方程含有两个在罐头工业中最广泛使用的实验参数:j和f值,因此程序使用简便,可靠,而且适用于对流加热和传导加热食品。该程序可用于解决简单型加热食品和有一个转折点的转折型加热食品的两类热过程计算问题。
This article developed a computer program for canned food thermal process calculations. This computer program uses a set of temperature equations and lethality integrals. Due to the fact that the temperature equation used contains two of the most widely used experimental parameters in the canning industry: j and f values, the procedure is simple, reliable and suitable for convection heating and conduction heating of foodstuffs. This program can be used to solve two types of thermal process calculation problems for simple heated foods and transitional heated foods.
