目的了解新会区集中式消毒餐具服务机构现状及餐具卫生状况。方法 2014年4月至2015年3月,选取3家集中式消毒餐具企业,调查企业的基本情况(名称、地址、规模等)、使用消毒方式、执行消毒工艺流程等,同时进行为期1年、每月1次的餐具检测,包括感官、大肠菌群、致病菌(沙门菌、志贺菌、金黄色葡萄球菌)、消洗剂-游离性余氯和烷基(苯)磺酸钠检测。结果餐具检测合格率为97.2%(210/216),致病菌和消洗剂残留指标合格率为100%,合格率高于普通消毒餐具。机构存在选址布局欠合理、卫生设施欠完善、出厂前未检测等问题。结论集中式消毒餐具值得推广,但消毒企业存在卫生隐患,建议修订餐具卫生标准,完善监管机制,应加大监督力度以规范行业管理。
Objective To understand the status of centralized disinfection tableware service in Xinhui District and the sanitary condition of tableware. Methods From April 2014 to March 2015, three centralized disinfection tableware enterprises were selected to investigate the basic situation (name, address, size, etc.) of the enterprises, the use of disinfection methods, the implementation of the disinfection process and so on for one year, Monthly tableware testing, including sensory, coliforms, pathogenic bacteria (Salmonella, Shigella, Staphylococcus aureus), detergent - free residual chlorine and alkyl benzene sulfonate test . Results Tableware test pass rate was 97.2% (210/216), pathogenic bacteria and lotion residual index pass rate of 100%, pass rate higher than ordinary disinfection tableware. The existence of the existence of institutional layout is not justified, health facilities imperfect, not detected before leaving the factory and other issues. Conclusion The centralized disinfection tableware is worth popularizing, but the disinfection enterprise has the hidden danger of health. It is suggested to revise the tableware hygiene standards and improve the supervision mechanism. Supervision should be strengthened to standardize the industry management.
