目的通过对团餐34道常见中式菜肴脂肪含量的检测分析,了解常见中式菜肴脂肪含量。方法选择北京市某单位团餐中常见的34道中式菜肴(18道素菜和16道半荤菜)作为研究样本,菜肴的食材和各种调味品均经过准确称重,加工过程全程记录。采集加工后的菜肴样本,采用国标GB/T 5009.6—2003进行脂肪含量检测。结果 34道中式菜肴脂肪含量为2.4~21.2 g/100 g,其中半荤菜的脂肪含量为3.4~21.2 g/100 g,含豆制品素菜脂肪含量为3.9~9.7 g/100 g,素菜的脂肪含量为2.4~6.3 g/100 g。34道菜肴的食用油添加量平均为(5.9±4.1)g/100 g。结论半荤菜脂肪含量一般高于素菜。食材脂肪含量、烹调方法、烹调油用量等均可影响菜肴的脂肪含量。
Objective To understand the fat content of common Chinese dishes by testing and analyzing the fat content of 34 common Chinese dishes in a group meal. Methods A total of 34 Chinese dishes (18 vegetables and 16 meat dishes) common in a group meal in Beijing were selected as the research samples. The food ingredients and spices were all accurately weighed and recorded throughout the process. Collection of processed dishes samples, the use of national standard GB / T 5009.6-2003 fat content testing. Results The fat content of 34 Chinese dishes was 2.4 ~ 21.2 g / 100 g, of which, the meat content of semi-meat dish was 3.4 ~ 21.2 g / 100 g, the fat content of soybean product vegetable was 3.9 ~ 9.7 g / 100 g, 2.4 ~ 6.3 g / 100 g. The average amount of cooking oil in 34 dishes was (5.9 ± 4.1) g / 100 g. Conclusion Half meat dish fat content is generally higher than vegetarian. Ingredients fat content, cooking methods, the amount of cooking oil, etc. can affect the fat content of the dishes.
