[目的]了解龙岩市食品中沙门菌、单核细胞增生李斯特氏菌、EHEC O157∶H7、金黄色葡萄球菌和副溶血性弧菌的污染与分布状况,为预防和控制食源性疾病提供科学依据。[方法]根据食品污染物监测项目规定的采样地点,按2008年国家食源性疾病监测网络工作手册,采集不同包装不同厂家等具有代表性的样品,依据国标方法,对生肉和水产品分别进行沙门菌、单核细胞增生李斯特氏菌、EHEC O157∶H7、金黄色葡萄球菌和副溶血性弧菌分离培养、生化及血清学鉴定。[结果]检测生肉、熟肉制品、熟制速冻米面制品、冰激凌、果汁、食用冰、奶茶、牛奶和动物性水产品9类样品共194份,共检出致病菌28株,总检出率为14.4%。其中金黄色葡萄球菌21株,检出率10.8%;沙门菌4株,检出率2.1%;副溶血性弧菌3株,检出率1.5%。EHEC O157∶H7和单核细胞增生李斯特氏菌均未检出。9类食品中致病菌检出率最高的是牛奶(37.0%),其次为熟肉制品(16.3%),冰激凌、果汁、奶茶中未检出致病菌。[结论]龙岩市居民主要消费食品存在食源性致病菌污染,其中牛奶和熟肉制品是主要污染食品,金黄色葡萄球菌是主要污染菌(检出率分别为37.0%和16.3%);生肉中沙门菌检出率较高(12.0%),主要血清型为德尔卑沙门菌;水产品检出副溶血性弧菌(11.1%),同时存在沙门菌污染。
[Objective] To understand the pollution and distribution of Salmonella, Listeria monocytogenes, EHEC O157:H7, Staphylococcus aureus and Vibrio parahaemolyticus in food in Longyan City, and to provide food for the prevention and control of foodborne diseases Scientific basis. [Methods] According to the sampling sites stipulated by the food contamination monitoring project and according to the 2008 National Foodborne Disease Surveillance Network Working Manual, representative samples of different manufacturers with different packages were collected. According to the national standard method, raw meat and aquatic products were respectively subjected to Salmonella, Listeria monocytogenes, EHEC O157: H7, Staphylococcus aureus and Vibrio parahaemolyticus isolated culture, biochemical and serological identification. [Result] A total of 194 samples of 9 kinds of samples including raw meat, cooked meat products, cooked instant rice products, ice cream, fruit juice, edible ice, milk tea, milk and animal aquatic products were detected. The rate was 14.4%. Staphylococcus aureus 21 strains, the detection rate of 10.8%; Salmonella 4 strains, the detection rate of 2.1%; Vibrio parahaemolyticus 3 strains, the detection rate of 1.5%. EHEC O157: H7 and Listeria monocytogenes were not detected. The highest incidences of pathogens in 9 categories were milk (37.0%), followed by cooked meat products (16.3%), and no pathogens were detected in ice cream, fruit juice and milk tea. [Conclusion] The main consuming food of residents in Longyan City was contaminated by food - borne pathogenic bacteria. Among them, milk and cooked meat products were the main contaminated food, and Staphylococcus aureus was the main pollutant (the detection rates were 37.0% and 16.3% respectively). The detection rate of salmonella in raw meat was higher (12.0%), the main serotype was Salmonella delphi; aquatic products detected Vibrio parahaemolyticus (11.1%), while Salmonella contamination was found.
