对广东省主要养殖贝类牡蛎和蛤仔体微量元素Cu、Cd、Pb、Zn、Cr、Ni的含量水平进行了分析,讨论了贝类体内脏团对贝类体微量元素含量的影响,并对牡蛎和蛤仔的膳食暴露量进行了估算。结果表明,蛤仔体内Cu、Zn含量远远高于其他4种元素的含量,而牡蛎体Cu、Zn、Cd的含量远远高于Pb、Cr、Ni的含量。蛤仔去除内脏团后,Cd、Cu、Cr、Ni含量比含内脏团略有降低,牡蛎体去除内脏团后,Pb、Ni含量比含内脏团略有降低,其余元素的含量变化很小。牡蛎和蛤仔体微量元素的膳食暴露量结果表明,蛤仔体Cd、Cr、Ni的膳食暴露量低,处于安全范围。牡蛎体Cr、Ni的暴露量低,处于安全范围内。牡蛎体Cd的膳食暴露量较高,但仍低于JECFA推荐值。牡蛎和蛤仔体内Pb的膳食暴露量虽然低,也需要尽可能减少其含量,降低暴露量。本研究结果对于提高贝类产品质量、保障消费安全有重要意义。
The contents of trace elements Cu, Cd, Pb, Zn, Cr and Ni in shellfish oysters and clams collected from Guangdong Province were analyzed. The dietary exposures to trace elements in oysters and clams revealed that the dietary exposures to Cd, Cr and Ni in the clams were low and within safe limits. Oysters Cr, Ni exposure is low, in a safe range. Dietary exposures to Cd in oysters were high, but still below the JECFA recommendations. Although dietary exposure to lead in oysters and clams is low, it is also necessary to minimize its content and reduce its exposure. The results of this study are of great significance for improving the quality of shellfish products and ensuring consumer safety.
