前言对虾是珍贵的海产品,含有20.6%的高蛋白,0.7%的低脂肪,味道鲜美,深为世界各国人民所喜爱。从五十年代以来,国际市场的需求量一直稳步增长,促进了各国大力开发海洋虾类资源。五十年代末,世界虾类捕捞渔获量仅为60万吨左右,六十年代初增加到大约80万吨。到1963年增加到94万吨,十年后猛增产达到169.8万吨。海洋虾类资源是有限的,到八十年代不少天然虾类渔场,已充分开发,或者开发过度,预期在南、北美洲、大洋洲、中东及非洲沿海水域捕捞虾类,不可能进一步增加。在北太平洋水域,由于自然条件的变化,虾类资源也日益减少,北大西洋水域虾类捕捞量虽有可能少量增加,但大幅度上升似乎不大可能。目前
