目的了解唐山市丰南区餐饮服务提供者食品采购索证索票及进货查验制度落实情况,为科学监管提供依据。方法自行设计调查表,采用分层随机抽样的方法对唐山市丰南区140家餐饮单位抽查米面油等8大类1 120批次食品的索证索票及进货查验记录情况。结果不同餐饮单位索证索票及进货查验制度建立率差异有统计学意义(χ~2=16.962,P<0.05),学校食堂最高(100.0%),小型餐馆最低(62.9%);不同区域餐饮单位合格率差有统计学意义(χ~2=104.258,P<0.05),城区(57.4%)高于农村(48.2%);被调查单位食品索证索票及进货查验合格率仅为54.7%,不同类型餐饮单位合格率差异有统计学意义(χ~2=104.258,P<0.05),学校食堂最高(77.5%)、工地食堂最低(15.0%);不同食品索证索票及进货查验合格率差异有统计学意义((χ~2=133.802,P<0.05),酒水饮料最高(75.7%)、蔬菜水果最低(27.1%);不同餐饮单位采购渠道构成比差异有统计学意义(χ~2=89.569,P<0.05);食品索证索票及进货查验记录的合格率差异有统计学意义(χ~2=8.133,P<0.05),索证、索票合格率(68.4%、68.6%)高于进货查验记录(63.6%)。结论唐山市丰南区餐饮服务提供者食品索证索票及进货查验情况不容乐观,有关部门应建立健全从农田到餐桌的食品安全追溯体系,采取多种措施,规范和提升食品生产经营者的索证索票及进货查验行为。
Objective To understand Tangshan Fengnan District catering service providers food procurement claims coupons and purchase inspection system implementation, provide the basis for scientific supervision. Methods The survey questionnaire was designed by self-designed stratified random sampling method to check the cable tickets and purchase inspection record of 1 120 batches of food in 8 categories including rice flour oil in 140 catering units in Fengnan District of Tangshan City. Results There was significant difference (χ ~ 2 = 16.962, P <0.05) in school cafeteria ticket issuance and purchase inspection system establishment rate among different food and beverage establishments, the highest in school canteens (100.0%) and the lowest in small restaurants (62.9%); (Χ ~ 2 = 104.258, P <0.05), and urban areas (57.4%) were higher than those in rural areas (48.2%). The passing rate of the surveyed unit’s certificate of claim and purchase inspection was only 54.7% (Χ ~ 2 = 104.258, P <0.05), the highest in school canteen (77.5%) and the lowest in site canteen (15.0%); the delivery of different food certificate and purchase inspection was qualified (Χ ~ 2 = 133.802, P <0.05), the highest in drinks and drinks (75.7%) and the lowest in fruits and vegetables (27.1%). The differences of procurement channels in different catering units were statistically significant (χ ~ 2 = 89.569, P <0.05). There was significant difference in pass rates of food claim coupons and purchase inspection records (χ ~ 2 = 8.133, P <0.05) %) Higher than the purchase inspection records (63.6%) .Conclusion Tangshan Fengnan District catering service providers cable tickets and purchase verification documents not optimistic, the relevant departments should establish and improve From farmland to table food safety traceability system, take a variety of measures to regulate and enhance the food production operators cable card and stock purchase inspection behavior.
