目的了解新疆生产建设兵团(简称兵团)第十三师食品中各类化学污染物及食源性致病菌的污染情况,为食品安全风险评估提供科学依据。方法在新疆兵团第十三师设8个监测点,采集9类食品进行检测,检测化学污染物104项、致病菌9项。结果 2013—2015年检测258份食品中的致病菌,检出致病菌21株、检出率8.13%,其中前3类食品分别是餐饮食品(检出率15.38%)、肉及制品、蛋及制品和桶装饮用水(检出率均为10.00%);检测267份食品中的化学污染物,检出各类化学污染物25份、检出率9.36%,检出的主要化学污染物有金属元素、农药残留、食品添加剂、非食用物质。结论新疆兵团餐饮食品、地方特色食品、桶装饮用水都是微生物污染较严重的食品,蔬菜及水果和调味品的生产存在化学污染物的污染,提示应加强食品种植过程中农药使用的管理和食品加工过程的监督工作,减少食源性疾病的发生。
Objective To understand the pollution of various chemical pollutants and food-borne pathogens in the thirteenth division of Xinjiang Production and Construction Corps (abbreviation: Corps), and provide a scientific basis for food safety risk assessment. Methods Thirteenth division of Xinjiang Corps was set up at 8 monitoring points. Nine kinds of food were collected for testing, including 104 chemical pollutants and 9 pathogenic bacteria. Results A total of 258 pathogenic bacteria were detected from 2013 to 2015, 21 of which were pathogenic bacteria, with a detection rate of 8.13%. Conclusion Xinjiang Corps catering food, local specialty food and barreled drinking water are all the food contaminated by microorganisms.
