A study of 8 research institutes from Australia, Israel, Japan and the United States shows that as the atmospheric levels of carbon dioxide (CO2) rise in the century, the levels of some cereals and pulses will be significantly reduced. Researchers adjusted the CO2 content of the field atmosphere to the level expected by the middle of this century and then observed varieties of wheat, rice, pea, soybean, maize and sorghum grown in the field. The results showed that the contents of Zn and Fe in wheat, rice, peas and soybean decreased significantly, and the protein content of wheat and rice decreased obviously under the elevated CO2 level.
