柑桔果实贮藏后期常普遍出现枯水现象,是限制宽皮柑桔延长贮藏的主要因素,某些年份也是影响甜橙贮藏的大问题。枯水果实,在宽皮桔主要表现是:果皮发泡,皮肉分离,囊瓣汁胞失水干缩。在甜橙类的表现是:果皮呈不正常的饱满,油胞突出,果色变淡无光泽,手触坚硬无柔韧感,失水严重时果实显著变轻,果皮凹凸不平;剖开果实观察:果皮变厚,白皮层疏松,油胞层色变淡,透明,易与白皮层分离,易脆裂,油胞内油压降低,挤之芳香油
