为了解招远市中秋月饼卫生质量状况,于1998年9月,在市区23个销售点,随机抽取中秋月饼进行了卫生质量监测.微生物指标包括菌落总数、大肠菌群、致病菌,按GB 4789-94,理化指标包括酸价、过氧化值,按GB/T5009.56-1996进行检验.依据GB 7100-86评价.共检测样品66份,合格56份,总合格率为84.8%.合格率以单项指标统计是酸价87.9%,过氧化值92.4%,菌落总数84 8%.其中酸价检出范围为0.24～6.15mg/g,过氧化值检出范围为l.50～28.36mmol/kg,菌落总数检出范围为2.5 ×10~(3)～7.6×10~(3)cfu/g,大肠菌群均<30个/100g.致病菌均未检出.
