医学研究发现,每口饭咀嚼30次左右才是最理想的。这样既有利于提高食物的利用率和营养价值,又具有防胖减肥之功效。曰本营养学家曾做过这样的试验:让一群体型肥胖的男女改吃不经过充分咀嚼就无法吞咽的食物(不改变营养成分),以迫使其逐渐养成细嚼慢咽的良好饮食习惯。结果男子经过19周后体重减轻4千克;女子20周后体重下降4.6千克。同时,这些肥胖者体内的血糖、胆固醇和中性脂肪也相应地有明显下降。
