目的:掌握同仁县市售食品中食源性致病菌污染情况,为今后的食品安全风险监测工作提供基础数据。方法:在同仁县城区抽取108份市售食品,根据GB/T4789-2008和《青海省2011年食品安全风险监测实施方案》的要求,主要对沙门氏菌、志贺氏菌、金黄色葡萄球菌、阪崎肠杆菌、单核细胞增生性李斯特菌、蜡样芽胞杆菌、大肠埃希氏菌O157H7共7个肠道致病菌进行了检测。结果:共检出致病菌14株检出率为12.96%(14/108),其中酿皮、凉皮中检出7株,凉菜中检出4株,熟肉1株,速冻米面2株。检出的致病菌分别是金葡菌3株,单增李斯特菌7株,蜡样芽胞杆菌4株,检出率分别为2.8%,6.5%,3.7%。结论:同仁县市售食品污染较为严重,今后要进一步加强食品行业的监管力度,预防食物中毒事件的发生。
Objective: To grasp the contamination of food-borne pathogenic bacteria in the commercially available food in Tongren County and provide the basic data for future food safety risk monitoring. Methods: According to the requirements of GB / T4789-2008 and “2011 Qinghai Province Food Safety Risk Monitoring Implementation Plan”, 108 commercially available foods were collected in Tongren county urban area. The main food was Salmonella, Shigella, Staphylococcus aureus, Enterobacter sakazakii, Listeria monocytogenes, Bacillus cereus, Escherichia coli O157H7 a total of seven intestinal pathogens were detected. Results: The detection rate of 14 strains of pathogens was 12.96% (14/108). Among them, 7 strains were detected in stuffed and cool skin, 4 strains were detected in cold dish, 1 was cooked, 2 were quick frozen rice noodles. The pathogenic bacteria were detected Staphylococcus aureus 3, Listeria monocytogenes 7, Bacillus cereus 4 strains, the detection rates were 2.8%, 6.5%, 3.7%. Conclusion: Tongren County is more seriously contaminated with food on the market. In the future, it is necessary to further strengthen the supervision of the food industry and prevent the occurrence of food poisoning incidents.
