铁板烧是在15~16世纪由西班牙人发明的,当时因为西班牙航运发达,商船往来于世界各地,船员终日与大海为伍,海上生活枯燥乏味,只好以钓鱼取乐,再将鱼放在铁板上烤得皮香肉熟。这种烹调方式后来由西班牙人传到美洲大陆的墨西哥及美国加州等地,直到20世纪初由一位日裔美国人引进至日本皇室,从此形成了改良派的日式铁板料理,其后又被引进到中国台湾、法国等地逐渐形成了台式铁板料理、港式铁板料理、法式铁板料理。同时,拥有了“贵族饮食”的定位,直到今天,餐饮界公认法式铁板料理是铁板烧的最高境界。
