种子在贮藏期间容易发生的“出汗”和“结露”现象,表面上看非常相似,即在种子颗粒表面均可形成微小水滴,但造成它们的因素却截然不同。种子“出汗”现象是由种子细胞内部生理生化活动的结果释放出大量的水分所造成,产生矛盾的主要方面是内因,容易发生在收获不久新入库的农作物种子中间。这是因为新种子的后熟作用尚在进行中,细胞内部的代谢作用仍比较旺盛,其结果使种子水分逐渐增多,一部分蒸气成为水气,充满种子堆的间隙,一旦达到过饱和状态,水气就凝结成微小水滴,附在种子颗粒表面,此时可导致种子堆内水分的再分配
